Cucumber Salad Recipe for Two

This quick and easy cucumber salad is fresh, healthy, and filled with flavor. Made with thinly sliced cucumbers, this delicious salad is perfect as a single-serving main dish salad or an excellent side dish.

This cucumber salad dish always reminds me of summer. It’s light and flavorful, easy to make, and prepared in minutes. Plus, there are amazing health benefits to cucumbers. It also makes a delicious topping for chicken or fish.

1 Cucumber, Diced

1 Cup of Shredded Carrots

1 Dozen Cherry Tomatoes, Sliced

1 Onion, Chopped

1/3 cup Italian Dressing

1/3 cup Pepper

1/3 cup White Vinegar

1/3 cup Sugar


Whatever you dice, chop, and slice, add to your salad bowl for eventual mixing and tossing. Let’s begin: 

  1. Dice Cucumbers
  2. Chop Onions
  3. Add Shredded Carrots
  4. Slice Tomatoes
  5. Add Italian Dressing, Vinegar, Pepper & Sugar
  6. Toss Salad

Voila! This salad is ready for two people to enjoy!
