Healthy Fall Recipes You’ll Love

With cooler temperatures and cozy nights, we’re all craving comfort foods. However, that doesn’t mean your autumn cravings should be sacrificed towards your health goals. That’s why I’d like to share with you a few healthy fall recipes that I’m sure you’ll love.

I can hardly contain myself now that fall is just around the corner. That means all things scarves, boots, pumpkin spice lattes, and cozy comfort food! Yet if you’re like me and trying to eat better, it’s easy to get sucked into that pumpkin muffin at Dunkin’ Donuts rather than a healthy meal. That’s why I’d like to share with you a few fall recipes that are guilt-free and perfect for the season.

Quinoa Chili

Fall Chopped Spinach Salad

Who says spinach salads are only for spring? Add a few fall favorites, such as butternut squash, apples, and cheddar to make a colorful and healthy salad. Just an idea, but this might make an excellent course for a Thanksgiving meal. Check out the recipe at Eating Well.

Instant Pork Pot Roast

When in doubt, make a pot roast! This Instant Pot Pork Roast recipe has saved the day multiple times when I’ve been in a pinch. Throw a pork shoulder, carrots, and potatoes in the Instant Pot and you have a healthy homemade meal in only 90 minutes. Did I mention that the pork is tender and falls apart when you cut into it? Chipotle-Spiced Pumpkin Soup

My spouse is a lover of all things pumpkin-flavored so we had to try this recipe. Even without the added cream, the pumpkin soup takes on a velvety texture after it’s simmered and pureed.  The result is a hearty and delicious soup that makes you want to cozy up to a campfire and watch the leaves fall. Sheet Pan Herb Butter Salmon

This easy sheet pan dinner is packed with flavors straight from the farm!
