After I’ve gorged on sugar cookies over the holidays, my body is craving a healthier diet that makes me feel good.  These three recipes are perfect for getting back on track after the holidays.  Filled with a rainbow of veggies and lean, clean proteins, these are just the kinds of meals you’ll want to eat to keep your immune system strong and your body feeling its best.

Three Pepper Chicken Chili

This healthy recipe comes from Anna Olson via the Food Network.   This delicious chili features diced chicken breast along with Szechuan pepper, onion, carrot, turnip, tomatoes and white kidney beans served over white rice.  After binging on Christmas cookies and candy canes all month, this will fine tune your taste buds and make you crave even more.

Credit to Jenn Segal from Once Upon a Chef, this cauliflower fried rice dish is absolutely delicious.  If you have any trouble finding grated cauliflower, I learned the hard way that you can easily find it in the produce or vegetable section of your local supermarket.  Or, you can use a hand grater like I did for a good workout.  Either way, your family will love this post-holiday recipe.
